前回の「酔っ払ったサクランボ」ケーキにたくさんの反響をいただき、本当にありがとうございます！🍒✨

「レシピが知りたい！」との声を多くいただいたので、おうちで作れる贅沢な黄金レシピをまとめました。

チョコ、甘酸っぱいチェリー、濃厚なクリーム、そして芳醇な洋酒が織りなす至福の味わいをぜひ楽しんでください。

🛒 材料
【ショコラスポンジ】
・卵：6個
・砂糖：125g
・薄力粉：100g
・コーンスターチ（または片栗粉）：大さじ1.5
・ココアパウダー：大さじ2.5

【特製バタークリーム】
・無塩バター（常温）：300g
・コンデンスミルク（練乳）：400ml

【チェリーフィリング】
・種抜きサクランボ：250g
・コニャック（またはブランデー）：200ml

【濃厚グラサージュ（チョコ上掛け）】
・無塩バター：100g
・砂糖：大さじ2
・サワークリーム：大さじ2
・ココアパウダー：大さじ1
・コニャック：小さじ1

👩‍🍳 作り方
1. チェリーの下準備（一番重要！）
サクランボをコニャックに浸し、最低5〜6時間（より深く芳醇な味わいにするには12時間〜最大3日間）じっくりと漬け込みます。※飾り用に数粒取っておくと綺麗です。

2. スポンジを焼く
1. 卵と砂糖をボウルに入れ、もったりと白くツヤが出るまでハンドミキサーでしっかり泡立てます。
2. 別の容器で薄力粉、コーンスターチ、ココアを合わせてふるっておき、泡立てた卵に数回に分けて加え、泡を潰さないようにゴムベラでさっくり混ぜ合わせます。

3. 型にクッキングシートを敷いて生地を流し込み、**180〜190℃**に予熱したオーブンで約45分焼きます（最初の30分は生地が萎むのを防ぐため、絶対にオーブンの扉を開けないでください！）。

3. クリームと組み立て
1. 焼き上がったスポンジを完全に冷まし、上部を帽子のように薄くスライスして切り離します。

2. 下側のスポンジの中身（くり抜いたメロンのよう）を手で優しく取り出し、底と側面の壁だけを残して「器」を作ります。

3. 柔らかくしたバターとコンデンスミルクを白っぽくなるまでよく泡立ててクリームを作ります。そこに、細かくちぎったスポンジの「中身」と、コニャックをしっかり切ったサクランボを加えて混ぜ合わせます。

4. この濃厚なフィリングをスポンジの「器」に隙間なく詰め込み、最初に切り離したスポンジの帽子をかぶせて、一度冷蔵庫で冷やします。

4. 仕上げのグラサージュ
小鍋にサワークリーム、砂糖、バターを入れて火にかけ、沸騰したら火を止めます。ココアパウダーとコニャックを加えて滑らかになるまで混ぜ、少し冷ましてからケーキ全体に美しくコーティングします。

💡 さらに美味しく仕上げるプロのコツ
大人のしっとり感： さらにジューシーで香り高く仕上げたい場合は、スポンジの「器」の内側に、サクランボを漬けていたコニャック液をハケで軽く塗ってください（強すぎる場合は少し水で薄めてもOK）。

じっくり寝かせる： スポンジは焼いた翌日に使うと扱いやすくなります。また、完成したケーキも冷蔵庫で数時間〜一晩しっかりと冷やすことで、味が馴染んでフィリングが落ち着き、劇的に美味しくなります。

お子様向けアレンジ： 小さなお子様やアルコールが苦手な方が召し上がる場合は、コニャックを「チェリージュース」や「砂糖水」に置き換えて作ってみてくださいね。
