Unless it's end to end encrypted then the server can't do anything.
In the IT security there is a Zero trust principle.If I don't trust WhatsApp,it gets my metadata. If I don't trust telegram,it gets all data.

Since there is no open source code for the server,you don't really know,what happens to you data
