Cast iron has much more thermal mass. Heats up slow, retains heat, cooks with radiant heat. Stainless steel heats up fast, cools fast, transfers heat directly to the coffee (conduction). So cast iron roasts the bean inside and out with radiant heat while stainless steel cooks by contact and scorches the exterior, leaving the inside less roasted and acidic and the outside scorched. Difference is in the taste.

@johnbrownsbeard Our grind works good for espresso, and with French press, our grind might be too fine for some mesh. But some would say a few grounds in the cup is actually a good thing
