My response to “how do you know what’s real?”
I would say that you can never fully know what the truth is, but you can have a clearer picture by using the process of elimination for what the truth is not.
Also, know yourself, reflect upon your own biases and force yourself to do the uncomfortable , perpetually second guessing the simplified story that you create to better understand the world in the first place.
My foremost proxy for understanding things is to view everything as if I were an amateur anthropologist, constantly observing others without judgment and understanding their perspectives even when I vehemently disagree with their beliefs

also, it’s important to understand how the human brain works(all animal brains really). The fact that because our sensory input is limited, our ability to accurately perceive our environment regardless of the deceptions you mentioned.
Look up heuristics (cognitive psychology). It’s basically the false assumptions that your brain makes in an attempt to understand the environment. These false assumptions lead to hallucinations, or heuristic fallacies. This is how optical illusions work, and it’s the basis for gestalt theory.
Gestalt is German for configuration. Another term for gestalt theory is configurationism. When your brain forms a gestalt/configuration, it could be an accurate representation of the environment that helps you survive in scenarios where you have to think “quick and dirty”.
Sometimes, these configurations are false representations of reality, which is why we sometimes hallucinate when not under the influence of hallucinogenic substances.
