Clay stills typically hold between 50–60 liters per batch.

Production stays intentionally small.

Santa Catarina Minas is known for clay pot distillation, a method that predates copper stills.

It produces smaller batches with a different texture and mouthfeel.

Most agave plants are harvested just before they flower.

If they flower, the sugar is lost.
