“Start with original Dragon Ball in Japanese or dub. When you start Dragon Ball Z there’s actually several different adaptations. There’s the original version with the Kikuchi score and the Funimation English dub with the Faulconer score. There’s also the Ocean dub which are a series of English dubs by the studio Ocean Group. You could also watch Dragon Ball Z Kai which cuts out all the filler and is an overall shorter experience. After you finish Z you can move on to Dragon Ball Super or GT.
