I taught at Le Cordon Bleu in Chicago for three years. So many people came through with dreams of fulfilling their creative drive in a restaurant kitchen. I wish I had this video to show them. You never see a sunset because you are working the dinner shift. You never see a sunrise because you are sleeping. You are on your feet 8 to 12 hours and they hurt. You are constantly burning yourself and cutting yourself. Chances are at least one of your coworkers are drunk, and if you are female, at least one of us hitting on you. Not all kitchens are like that, but too many are.

To me relevant means it should be taught in schools and we should agree on what a final “reconciliation” looks like

I don’t think for a moment it means an unending blank check with no auditing or oversight and an unending guilt trip for the rest of Canada
