Totally agree. There are so many opportunities in industry. It hurts all of us to talk about ‘us vs them’ in academia vs industry. Novel research to application is a continuum and we need to build better bridges to solve hard problems.

@ClementYChow I used to butcher my own pork. I’d use scraps from making the cuts as well as some shoulder, loin roast, and leg (uncured ham). Plus back fat up to 30% by weight. Good for sausages and dumplings.
