Its a tricky situation that has been handed down as a legacy business model. People are just thoroughly uneducated about the situation. In North America restaurants margins are razor thin. 80% of new restaurants fail in the first 5 years. If a restaurant was to stop the tipping model and start paying comparable wages they would literally go under with in the month. Food costs would rise sky high to compensate. Dining at a mid tear place would suddenly cost what it would at a Michelin star restaurant with out the quality of food, let alone service. its a terrible feed back loop thats been made customary where around 10% of all sales goes to the kitchen and house so even at 20% tipping the servers only get 10% of that. If some one tipped only 10% the server would literally have to pay out of their own pocket to serve a table. It happens to me atleast once a week at my job. With rent and food costs already so high having to pay $25 wage ontop would be very hard with out having to inflate everything els. Europe and other countries never had this system so its been built it, but making the transition would be devastating to small businesses. I agree it can be done, would just be basically many people losing their jobs, while the transition happens and the growing pains set in and as new business open with more funding to replace those that cannot make the change. It sucks but its the way it is around here
