A bear in Turkey had been raiding a beekeeper's hives for three years, costing him $10,000. The beekeeper set up four jars and a hidden camera to figure out which one the bear was after. The bear picked the most expensive honey on the table. Every single time.
Metal cages and fruit baits hadn't worked. The beekeeper called one of the bears "Big Boy." On the table: chestnut honey, flower honey, cherry jam (a decoy), and Anzer honey. Big Boy went straight for the Anzer, ignored the cherry jam, and kept doing it night after night. The beekeeper kept moving the jars around. Same answer.
Anzer is a legally protected Turkish mountain honey from one plateau in the country's northeast, sitting about a mile and a half above sea level. About 500 wildflower species grow there, and 80 of them grow nowhere else on the planet. Turkish law bans outside beehives on the plateau. The whole harvest happens in the first or second week of August every year.
Total yearly production is two to three tons. Turkey makes more than 100,000 tons of honey a year, so Anzer is a rounding error on a rounding error. The local cooperative sells it for about $88 a kilo. By the time it reaches specialty shops in the US or Europe, the price runs $300 to $600 a kilo. That puts it in the same range as high-end Manuka honey from New Zealand.
A bear's sense of smell is around 2,100 times stronger than a human's. The smell-processing part of a bear's brain is five times bigger than yours, even though the bear's whole brain is only a third the size. Inside a bear's nose is a honeycomb of tissue covered in millions of scent receptors. The same area in your nose is about the size of a postage stamp.
Only one lab in Turkey is allowed to test Anzer honey: Hacettepe University in Ankara. They've been doing it since 1978. Their tests show roughly ten times the antioxidants of normal honey, plus a chemical fingerprint that only shows up in plants from this exact plateau.
Big Boy figured it out by smell alone, in seconds. The lab needed 48 years.
