I think you should be able to train your model on any content you have legal access to; shifting model weights in a neural network does not give the model the ability to plagiarize the work's text. As long as the model never violates copyright, it should be golden.
Put more simply, learning from content is not a copyright violation, and shouldn't be, IMHO.
But you can't steal content, train the model, and then delete the content... if that's what happened!
