@shipwreckshow Then use the small left over starter and re-feed 5gm starter, 25gm water, 25 gm water and throw in fridge. Take out a few days before baking and re-feed 1:5:5 ratio to activate it and use in recipe. The process starts all over. Just don’t want to see you waste $ on flour

@shipwreckshow So you can daily 5gm starter, 25gm flour and 25 gm water 1:5:5 ratio.
Day before baking increase volume to make enough for your recipe. So if your recipe wants 125gm of starter, do 15gm starter, 75gm flour and 75gm water. Let it rise to peak and use when it starts to fall.
