Roast chicken is a solid choice! As for why rôtisserie, I like how much control it demands. You can’t really hide behind a sauce or a complicated technique. The heat, timing, seasoning, and the quality of the meat all have to work together!

I spend most of my day around fire, meat, ovens, and enough heat to make me question my career choices lol. Rôtisserie is basically cooking with dry heat, usually roasting meat over or in front of a heat source. Do you like meat, Dira? / @ofdemonici
