We raided or cellar and dug up a keg of Specular Reflection for your weekend enjoyment. Fermented in a Baco Noir barrel with Ebbegarden Kveik and so many strains of brett before getting a little love from some El Dorado. And it’s tasting better than ever.
Like the spring, Plurality has finally returned. Fermented with a blend of our house Saison yeast and several strains of Brettanomyces, this bright and effervescent Saison carries notes of honey, hay, lemon zest, peppercorn and a gentle, earthy funk. On tap and in bottles.
We made Keptinis with @EscarpmentLabs! What’s that? A traditional Lithuanian Farmhouse Ale where the mash is baked to caramelize all those sweet, malty sugars. The result has the complexity and malt character of a barley wine with notes of brown sugar and dark fruit. On tap now!
Foresight is a Fluffy IPA. With a grist composed of equal parts pilsner, maris otter, and wheat malt, this one’s all about the light and airy texture from large amounts of wheat. Fermented hot with Voss Kveik and hopped heavily with Amarillo, Mosaic, and Enigma. Our now!
New Rhizome! This time featuring Hallertau Mittelfrüh and Hersbrucker for subtle floral and woody notes. We’ve also started naturally carbonating Rhizome with this batch, which has allowed our yeast blend to express itself further with notes of lemon, lime, strawberry, and hay.

Presented in this tasty little trio is a new, and ever so small pale ale: Triclops. Fermented with Sacch Trois (😉) and hopped with three of our favorite hops (Galaxy, Azacca, and Mosaic), Triclops clocks in at 3.9% ABV (9=3x3 🤓). Come in and have one—or three!

Nap Time is a Gose brewed with Indian coriander and sea salt, fermented with six different strains of brettanomyces, and hopped with El Dorado and BRU-1. It’s vibrant, full of electrolytes, and packed with all the sunshine and promise of a warm spring day.
Tomorrow! Hyperreal was fermented with Voss Kveik at the "uncomfortably hot summer day" temp of 40 C then double dry-hopped with "big summer vibes" hops Citra, El Dorado, and Vic Secret. It's a very good summer day in a glass, if you need that kind of thing right now. (You do.)
Today we brewed our 50th beer fermented with kveik! That's a lot of hot ferments with this strange and lovely family of yeast. To celebrate we'll be dropping a big ol' DIPA on Friday. Too much Citra, El Dorado and Vic Secret, fermented way too hot with Voss Kveik. It's Hyperreal.
Also, @Bashmaan and I finally checked out @FollyBrewing over the weekend and it easily tops my list of #Toronto craft brewers. Excellent (and well-priced) selection of beers!
