Was gifted a piece of Butchering History today.
A Captive Bolt Stunner from the very early 1900’s (weighing in at 2.65kgs) used to replace killing cattle by pole axe, this was the new humane way of slaughter at the time.
This is what my grandfather would have used to go about his daily business.
If you’re sensitive to how your food is made don’t read any further!
🐄 How It Was Used
•The device would be held against the animal’s forehead.
•When triggered, the bolt would shoot forward with significant force, penetrating the skull just enough to destroy part of the brain.
•This causes instant unconsciousness, minimizing suffering and making the subsequent slaughter safer and more humane.
•The animal would then be bled out while unconscious.
In case you don’t know me, I’m extremely passionate and proud of my trade and my heritage as a 4th generation Butcher so this gift absolutely made my day!!!
Big thanks to Davy Moran, a veteran generational Butcher and longtime friend of the family for this amazing gift 🙌
🥩 Miyazaki A5 vs Irish Wagyu 7+ 🇯🇵🇮🇪
Two world-class Wagyu experiences in the counter today 🔥🔥
Both unforgettable, yet completely different!
🔥 Miyazaki A5 / BMS 12 – Japan
Hailing from Miyazaki Prefecture, this is Wagyu at its most refined. With the highest marbling grade possible (BMS 12), it’s like eating velvet. Rich, buttery, and umami-packed, it melts on the tongue and needs only seconds of heat to release its flavour. Best enjoyed in small slices (60–90g per person) to fully appreciate its depth without overwhelm.
🌱 Irish Wagyu 7+ Grade
Born and raised on Irish pasture and dry aged by @higgins_butchers ,this Wagyu brings together luxurious marbling with a distinctly Irish beefiness. With a firmer bite and bold flavour, it stands up beautifully to traditional steak cuts and grilling. Ideal for those who want indulgence without losing that satisfying meatiness. Perfect at 250/300g portions for a decadent main course.
✨ Two styles, two stories.
Whether you’re after the silken delicacy of Japanese A5 or the rich heartiness of Irish Wagyu, both are crafted for unforgettable eating.
