With longer exposures you can gather more light on the camera sensor to show more star light, aurora, satellite reflections etc. On the contrary, video is limited to much, much shorter exposures per frame, so less light gathered.

@SonyAlpha for the love of the universe, PLEASE can you include extended shutter speeds beyond 30s in camera?! I frequently shoot 1 to 5 minute exposures. It's a pain to need an external intervalometer when it could easily be achieved with a firmware update for my a7iii and a7iv.
