Chef José Garzón might be the busiest chef in Seattle, with a “drinking snacks” popup, a Cantonese/Ecuadorian prix fixe, a dinner party/chef showcase, and an open-late food counter inside a metal bar. He might make the best fried chicken, too.

If your chefs are not this happy to be at work then why even have a restaurant? Take care of your people. Listen to them. Pay them a fair wage. Train them and set them up for success. Remember why you started doing this in the first place. @garzonpnw
