Today for lunch I made Frying Pan Pizza in a huge cast iron skillet. I heat my oven to 400 degrees F and get started prepping all the ingredients. Most important is good sauce (I use Rao’s), grated mozzarella, Parmesan, pepperoni, Italian sausage, mushrooms, olives, crushed garlic, and peppers. The pizza dough is store bought.
Anyway, you get your pan hot on the stove top, like from a medium low heat and add olive oil and corn meal in the bottom. In goes the pizza dough sized up just right so you can fold the edges over a bit. Then you add the sauce, not too much, a thin layer is good. The two cheezes and all your toppings go on next. Be careful the flame under the pan is not too hot. You want a crisp bottom not a burned bottom.
Then into the oven you go for 20 minutes or so. You can add chopped basil at the end and pepper flakes. I didn’t have any fresh basil today. It is what it is. The pan is really hot. So be careful removing the Pizza. I have a monster spatula and a Pizza Peel (paddle) so I am golden. You might need help from a friend to tip the pan while you slide the Pizza out. Leave a towel or an oven mitt on the handle of the pan so everyone knows it is hot and Itadakimasu!
