Increases focus, attention and memory (like caffeine)
Decreases stress and anxiety

Your claim that nicotine puts people "on edge" is logically equivalent to claiming coffee causes fatigue.

You should also know that adults like flavours as much as kids do and most don't want the taste of tobacco after quitting.
