I have an AmEx business card I spend ~$40k on each month, with no limit.
Pay the balance, no missed payments, no credit change.
AmEx slapped me with a $29k limit. I appealed and was denied instantly. Called, was told they can't even look at it.
Super frustrating.
SAVORY SLOW-COOKED PORK & ITALIAN PASTA DELIGHT 🥩🍅
"Slow-cooked goodness, Italian-style"
Serves: 4–6
Ingredients
For the slow-cooked pork sauce:
800 g pork shoulder or pork stew meat, cut into chunks
400 g spaghetti or your favorite pasta
2 tbsp olive oil
1 medium onion, finely chopped
2 carrots, diced
3–4 garlic cloves, minced
2 tbsp tomato paste
400 g canned chopped tomatoes
250 ml chicken or vegetable stock
150 ml dry red wine
1 tsp dried oregano
1 tsp dried basil
1 tsp dried thyme
1 bay leaf
½ tsp smoked paprika
Salt and freshly ground black pepper, to taste
½ tsp sugar, if needed to balance the acidity
1 tbsp balsamic vinegar
For serving:
½ cup freshly grated Parmesan cheese
2 tbsp chopped fresh parsley
Extra virgin olive oil, for drizzling
Freshly ground black pepper
Instructions:
1. Season the pork:
Pat the pork dry with paper towels. Season generously with salt, black pepper, and smoked paprika, if using.
2. Brown the pork:
Heat olive oil in a large heavy-bottomed pot over medium-high heat. Brown the pork in batches on all sides until beautifully golden. Avoid overcrowding the pan. Transfer the browned pork to a plate.
3. Build the flavor:
In the same pot, add the chopped onion and diced carrots. Cook for 5–7 minutes until softened. Add the garlic and cook for another 30–60 seconds until fragrant.
Stir in the tomato paste and cook for 1–2 minutes to deepen its flavor.
4. Prepare the Italian tomato sauce:
Pour in the red wine, and scrape the bottom of the pot to release all those delicious browned bits. Let it simmer for 2–3 minutes.
Add the chopped tomatoes, stock, oregano, basil, thyme, bay leaf, and balsamic vinegar. Stir well and return the browned pork to the pot.
5. Slow-cook until tender:
Bring the sauce to a gentle simmer, then cover and cook over low heat for approximately 2½–3½ hours, stirring occasionally, until the pork is fork-tender and easy to shred.
Alternatively, transfer everything to a slow cooker and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the pork is tender.
If the sauce becomes too thick, add a little stock or water. If it is too thin, remove the lid toward the end of cooking and allow it to reduce. Remove the bay leaf and shred some of the pork into the sauce while leaving a few tender chunks whole.
Taste and adjust the seasoning. Add a little sugar if the tomatoes are too acidic.
6. Cook the pasta:
Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente.
Before draining, reserve about 1 cup of pasta water. Drain the pasta without rinsing.
7. Bring everything together:
Add the cooked pasta to the pork sauce and toss gently until every strand is coated in the rich, savory sauce. Add a splash of reserved pasta water if needed to create a silky consistency.
Allow everything to simmer together for 1–2 minutes so the pasta absorbs the wonderful flavors.
8. Garnish and serve:
Transfer to a warm serving dish. Top generously with freshly grated Parmesan, chopped parsley, freshly cracked black pepper, and a light drizzle of extra virgin olive oil.
Serve immediately while warm, with crusty garlic bread and a fresh green salad if desired.
Tips:
Browning the pork before simmering creates a deeper, richer flavor.
For extra depth, add a small pinch of chili flakes or a little fresh rosemary.
Use freshly grated Parmesan for the best flavor and texture.
The sauce tastes even better the next day as the flavors develop.
Enjoy!🥩🍅

Just your random reminder that the Cowboys were going to hire Sean Payton in 2020 but it fell apart because of Anthony Davis 😂

For the first time in Kyle Shanahan's tenure as HC of the 49ers... it is no longer his offense.
This is exactly what Kyle Shanahan has wanted and needed. This is exactly what he dreamed of one day having:
An elite qb who can take over and he can fully trust to hand over the keys with zero resentment. He has that now and that is why the 49ers offense is what it is even when missing everything they are missing due to injuries.
Not trying to look past Navy but this one thing keeps popping up in my head…
The Miami game is a CJ Carr legacy game.
As it stands, CJ Carr is 16-3 as a starter. Of those 16 wins only only 2 were against ranked opponents (USC/Pitt)
USC finished that season 9-4
Pitt finished that season 8-5
All 3 of his losses were to Top 10 opponents
If we beat Miami we most likely dance our way into the playoffs and CJ finally gets a true signature win.
If we lose, CJ will card another top 10 loss and will most likely finish his ND career without a playoff appearance or a top 10 win.
What do you think CJ Carr’s legacy be by the time he is done at Notre Dame?
