Today it was one thing after another. First, the pump seized up, then the power inverter faulted and had to be reset. Then, we had to sterilize all the totes with bleach. Finally, FINALLY, we're actually filling them back up with springwater for our next #contractdistilling run!
We’re planning to fill up three totes with springwater today for the next #contractdistilling run. There's just one little problem; the filter isn't hooked up yet. Once our engineers get that task done, we can get started. In the meantime, the springhouse is a cool place to wait.
There’s just one corn wagon left between us and salvaging the workshop so we can build our headquarters #downonthefarm. Before we process this corn for #contractdistilling, we need to figure out if there’s enough for another run. First trailer load of many for us to evaluate.

It’s been a lot of hard work to process #JimmyRedcorn for our #contractdistilling project. But, as a result, one of the two corn wagons that had been stored in the workshop has been emptied and moved out. There’s one more wagon to empty. Then we can start salvaging the building.

Distillation is about as exciting as watching water boil, but we're still excited to see how the second batch of #JimmyRed whiskey Prichard’s is #contractdistilling for us turns out. Here, Seth is taking samples from the Low Wine tank to see how full it is and to check its proof.

Right after we collected the farm's springwater to send to Prichard's for our #contractdistilling project, we also collected a couple of buckets for our own use. We use this water for proofing down all the spirits we're trialling, as well as for making all our #botanical wines.
With Second Intention Farm's #JimmyRed corn ready to send to Prichard's, it's time to deliver the second major component for #contractdistilling our first #whiskey - the farm's delicious springwater. We're sending them three totes for this batch, or about 750 gallons.

While we were waiting for the temperature to rise during our corn cook, Charles Moore came to get the buckets, barrels and totes we used to haul the farm’s #JimmyRed corn and springwater to Prichard's. We’ll clean them and fill them up again for the next #contractdistilling run.

As the spirits run proceeds, more and more water is removed, which concentrates the alcohol in the distillate. You can see evidence of this happening if you compare the position of the hydrometer in the first video we posted to its position in this one. #contractdistilling
Our distillate has been moved from the "stripping" still to the spirits still. In this run, it will go through several additional distillations to remove any unwanted impurities that could affect the flavor of the end product. #Contractdistilling
As the stripping run @prichardspirits wound down, Seth took a sample of our #JimmyRed distillate over to the lab for testing. It looks like we're looking at about 43 proof at this stage, or around 21% alcohol by volume. #contractdistilling

They say a watched pot never boils, but this one definitely has been! Seth is checking the hydrometer frequently now, so he can put the brakes on this stripping run at precisely the right moment. #contractdistilling
Distillation is as much a waiting game as cooking the corn. We watched the hydrometer closely during this first stripping run as our first #JimmyRed distillate started coming out of the still. When the proof drops to a certain level, Seth will stop the run. #contractdistilling
