The Chef is taking it as a personal attack/failure. The implication is that they under season their food. And that is one of the harshest critiques you can give.

The first time i truly realized this was working as a waitress. The amount of times people order something, and I'd usually have to tell them what it is and what's in it despite the menu having descriptions. Because they can't read it.
As a person in the industry who is the default person to cut/plate cakes when guests bring them in...
That restaurant is TRIFLIN'.
On top of that, I bet they were charged a plating fee (pretty standard if you bring outside desserts $ X/per plate).

A restaurant ate half the Birthday Cake he made for his friend. They served the cake backstage and when asked for the rest of the cake they said it was all gone.
Me who worked in pastry for a few years: *Pokes the ice cream before scooping* I gotta see how firm it is so I know if I can scoop and eat now, or I need to wait and temper.
