Grapes stay skin contact for 12-24 hours before natural settling.
We get a long-drink wine, with balsamic hints of thyme and lavender with a nice mineral finish.

Fermentations are taking place correctly at Bodegas Marañones.
They are spontaneous, i.e. we do not use yeasts that do not come from the grapes themselves.
We winemaking each plot individually in order to know the contribution of each one of them.

We have already finished the harvest of the Garnacha grapes. 🍇
The last plot to be harvested has been Labros, which has ripened last.
All that is left is to pick the Morate, a native variety to our area, with which we make our Darío.
