#EveningInSC #Summer #Kishapolee #TinyBlueSpec #Sheen #GalacticFederationOfLight This evening is magnificent here in the upstate of SC! Sitting watching and listening to the birds sing and the whiff of pecan splits burning is intoxicating! The grass has almost came in full force and the sky is so blue! The offset has some Canadian bacon that was brined for 14 days that slow smoking with those pecan splits. It was a while pork loin that I use for this recipe. You can see the smoke (wispy) from the stack and you can see a small orange fire that’s just about perfect for the right amount of smoke and clean heat! Early on you give it more smoke as the cold meat absorbs it nicely. 2/3 dampener for the first 30-45 mins (this is a quick cook) and 3/4-full for the remainder. Truly amazing and until Sheen comes, this is my small part of paradise on this tiny blue spec!! 🌟💙🩵🌏💠🔥💠🌏🩵💙🌟
