Dr. Wallach 指 #阿爾茲海默病 是由醫學界造成的，在40年前是非常罕見的病。現在阿爾茲海默病是美國65歲以上年齡組群的第四大殺手。
什麼是阿爾茨海默病？就是大腦 #髓鞘質(#Myelin - 又稱 #髓磷脂)嚴重缺乏。髓鞘質是包覆在 #大腦神經元 的胞突外部的膜外物質，由30%蛋白質和70%的各類脂質組成。把腦神經比作電線的話，髓鞘質就是神經外面的絕緣材料，約佔大腦重量的75%。如果大腦中的髓鞘質不足，而又沒有足夠的替代髓鞘質補充的話，這些裸露的神經纖維，就會糾纏在一起，從而發生「#短路現象」人的記憶力就紊亂起來，這就是阿爾茲海默病的成因。
膽固醇的功能，是維持 #細胞膜 的穩定，髓鞘質是由100%的膽固醇構成。人體中總膽固醇的25%都集中在 #中樞神經系統，大腦重量的75%都是膽固醇。
可想而知膽固醇對於大腦有多重要。因此，若要迷信「醫生的囑咐」，持續限制含膽固醇的飲食：
。吃雞蛋，只吃蛋白
。吃人造黃油和菜籽油，而不吃奶油、黃油、豬油
。吃豆腐，而不吃紅肉
。吃去骨、去皮的雞胸肉
。吃醫生開給你的降膽固醇藥
然後，你就不會記得你是誰了。
阿爾茲海默症：最常見的症狀是腦退化、記憶、思想、行為、和社會技能持續下降，影響個人自理能力。
其主要成因，是大腦缺乏膽固醇，及髓磷脂而造成的。髓磷脂是構成「髓磷脂鞘」的成份，包覆在神經元外側，對神經起到保護和絕緣的作用，就好像電線的外皮。可是，髓磷脂缺乏的話，「髓磷脂鞘」就不復存在了，神經纖維就處於裸露狀態，糾纏在一起的「神經纏結」就發生「短路故障」情況。
磷脂的缺乏，往往因聽從「醫囑」堅持低膽固醇飲食，或服用磷脂藥物而造成。只要你遵從醫生吩咐，長期服用降膽固醇藥，並刻意限制膽固醇的攝取量、刻意吃人造奶油、菜籽油、豆腐、去骨去皮的雞胸肉…. 你便有可能患上。
正確的選擇食物，應該是回歸自然生活，不要害怕吃奶油、豬油、雞蛋、紅肉、豬皮、雞皮、魚皮….
人體內的膽固醇到底高不高？
。#腦細胞 是由膽固醇組成
。#皮膚細胞 是由膽固醇組成
。#性激素 是由膽固醇組成
。#免疫細胞 是由膽固醇組成
。膽固醇還用於製造維他命D
。還有所有類別的 #類固醇激素、#糖皮質激素、#礦物類皮質激素、和性激素，是 #膽固醇的衍生物。
膽固醇在性激素的製造過程中，擔任很重要的角色，#低膽固醇的男人：
。#睾丸激素 水平較低
。性慾較低
。#精子數量 低
。#勃起功能障礙
所以，膽固醇對人類生命和生存都非常重要。認為膽固醇有害健康，是個天大的 #謊言。
健康膽固醇的指標，40年前是300。然而，有人刻意一直把它往下調。現在已經降到190。因此你便深信不疑，你需要 #終身吃藥(切記你的血膽固醇不能低於200，正常應該是220 - 270)。
