Nathan Johnson, junior sous chef at The Royal Crescent Hotel, Bath and South West Overall Chef and Young Professional Chef 2022, has created our main course this evening.
His dish is west country beef fillet, Maitake, Yukon Gold, Pedro Ximénez and red wine jus.

Jamaar Semper, who is Sous Chef at The Methuen Arms, Corsham, and was South West Young Professional Chef 2019, has created this evening’s starter which is monkfish, celeriac purée, celeriac sauce, pickled apple, hazelnut and truffle pesto and sea herbs.

They are all previous winners of SW Chef categories who produce the most stunning dishes from our abundant regional food larder.

• Starter: Partridge tart, quince purée, pickled quince, braised chicory mix, walnut, walnut split sauce
• Main: Anise scented seabass, shellfish tortellini, fennel, sauce vierge, lemongrass foam

• Main: Partridge Kiev, wild mushrooms, three cornered leek, pomme purée

• Starter: Partridge with a Cornish mead glaze, a pumpkin purée and mulled beetroot

Starter: Pan fried sea bass, yuzu, chilli and coriander scallop ceviche, squash bouillabaisse
