Gibbeting the Bread
If the first #bread of the #harvest is made from grain cut too soon, the bread tastes like rope.
Ropey bread should be impaled on a stick and hung in a cupboard to prevent misfortune with subsequent loaves. This is 'gibbeting the bread'.

Some call this bread singing, wee bakers home call it bread whisper but either way it’s the sweet sizzle and crackle of a perfect loaf. As a Yeast/bread historian & a baker it’s my favourite part of the morrow when I’ve 200+ loaves whispering their secrets all at once!

Bakers hours: 4 am, Time to feed the starter. This morning ends with 2 beautiful loaves of Red Wheat Sourdough.
The starter today was shared with me by Bré O’Leary from Derry & it’s over 130 years old.

This afternoon I am working with a 167 year old red whole wheat starter from #Derry It has been fed every few months since it’s creation & is truly magnificent. It smells of rustic woods & good ferment!

As I ready this Yeast, feeding it it’s weight in flour & water for tomorrow’s lesson, I canna’ help but ponder about the 150 years of history in this particular jar.
The woman who made this starter believed that freedom started at the dinner table.

The sourdough starter I use was handed down by my great great grandmother, still in the same jar.
I have shared it with many people, today was the 200th person I’ve given a teaspoon of 200 years of history to.
I am always humbled to share this piece of Ireland❣️

Today I taught 2 Irish American chefs to make famine bread & the #Breadlore behind these breads
I couldna’ help but cringe when 1 said to the other
“Maybe we can make it taste better next time?”
The other chef replied
“No you dope, things taste bad during famines”
