11 pints of peach BBQ sauce processed. 3 quarts and 4 mylar bags full of chopped onions!

One bag of beans made 10 jars of black beans. It’s so easy to have these ready for taco Tuesday nights. 3 ingredients beans, salt, and water!

Unloading the freeze dried onions. 1 medium sized load gave me 4 bags for long term storage, and 1 half gallon & 1 quart jar full for short term use.

Zucchini salsa and more pickles.
This was a great challenge and will help feed my family throughout the winter. I learned so much from you all through this too. I was able to use the tomato skins and make tomato powder. Dehydrated kale and Swiss chard to make a green powder to add to soups and such. Freeze dried milk and many fruits.
This tribe is truly amazing. I truly can’t thank you all enough. Many blessings 🇺🇸🙏🏼🇺🇸

😅It has been a busy month of preserving! But we have a great set up for winter now!
I made my dad an apple crisp for his bday. I dehydrated the last of the apples.
I’m also grinding up red pepper flakes from the hot peppers I dehydrated.

It has been a weird day. I have some inflammation issues going on and I had a late start because of that.
Today we are just juicing these grapes and freezing some. We couldn’t eat all of them fresh! We are blessed with abundance. 💗

Today I’m tackling those bags of apples. I’m dehydrating 3 trays and making applesauce to can.

It is my son’s 15th bday today!
He requested pumpkin waffles, so I will count this as my #everybitcountschallenge since
I will be freezing the extra. It’s not cheating, right?! 😉

9 pints of pickles.
I was gifted a bunch of pickling cucs.
This was my first time doing pickles EVER. It seemed fairly easy. I don’t know how they taste yet. Should I open a jar to try them or is it better towait a couple days?

It has been a wonderful squash year.
Lots of patty pan squash and zucchini. I harvested my first couple spaghetti squash.
Today I am going to shred some of this zucchini and freeze it. I think I’m going to make a soup with the patty pan and zucchini.

Today we used *some* of those plums to make plum sauce and scrap jelly out of the skins and pits.
I still have quite a few to work through, but we also love eating them fresh!
I also froze a bunch of grapes. They are ripening faster than I can handle!

For #everybitcountschallenge I did extra yesterday, taking Sunday off.
I found a secret… dehydrate Okra and grind it up to thicken soups and sauces. I think this worked the best for me!
I also probably processed my last pickles of the year and froze things.

Whew… I am entering into an even busier season. Tonight we have an overnight guest so again, easy canning today.
I did some carrots and green beans.
Also some easy stuff for tomorrow.

I feel blessed. We were given another full bag of pears last night. 🥰 They will get delicious pear sauce as a thank you.
I’m going to once again can the pears, make a pear sauce, dehydrate and freeze the rest. Dehydrated pears are really yummy snacks!
