Curried mutton pie and spring greens for tea tonight. Inspiration from @chefcalum and using my #puffschool pie dough recipe. I do love Pie!
I entered the wonderful world of CHOUX! It was hard work but so fun - the dough, the craquelin for the top, hazelnut praline (to make a paste, to make a mousseline), chantilly cream and dark chocolate sauce. Lots of hard work, temperamental custard and deliciousness #PUFFSchool
Made soufflés for the first time tonight ( part of #puffschool) raspberry soufflé for Christmas Eve pudding!
The pitta dough has had a cold prove overnight #puffschool chicken marinading in the fridge and Zhoug made for an easy tea tonight
Oh, this? Why YES it is a twice baked chocolate cake! Crunchy on the outside, like a soft brownie at the bottom and deliciously oozy at the top. God. Get me a spoon. #PUFFSchool
Mille Feuille with strawberries macerated with lemon and basil and a mascarpone cream #puffschool
It’s been a labour of love in this weeks #puffschool making invert puff pastry. I’m super relieved I have decent layers! This is it after it’s last turn before rolling out. I’ve made some pastry discs now ready for strawberry, basil and mascarpone cream Mille Feuille for after
Choux buns filled with hazelnut creme mousseline. Simply divine 🌰 #bake #bakeoff #baking #puffschool
So far this morning I’ve completed the lamination, first single turn & first double turn of my invert puff pastry in #puffschool & made granola. My reward? @haxbybaker delights of a mincemeat bears claw & creme brûlée brioche.
Baked Alaska from this weeks #puffschool pistachio sponge, raspberry compote, white chocolate and raspberry parfait, Swiss meringue. I need to work on the set of my parfait. It wasn’t as solid as I would have liked.
At #PUFFSchool, it’s Cake time! First on the list: Hazelnut & Ricotta Cake. Stuffed with choc chips & ground hazelnuts, topped off with rich ganache & roasted hazelnuts. The ricotta makes the sponge super light - perfect for having with a nice cuppa. Lockdown baking at its best.
More carbs. Made croissants. #puffschool
Cinnamon rolls, made with milk bread dough, cold fermented in the fridge overnight. Well worth staying up late to prove and bake.
And yes, I licked the cinnamon filling bowl. It’s only right. #PUFFSchool.
This week from #PUFFschool - I made Basque cheesecake! It is (mostly) PURE DAIRY, poured into a cake tin and gently baked. You end up with a gorgeous caramel flavoured crust, and a soft, creamy, rich middle. It’s DIVINE.
Today in #PUFFSchool - set cheesecake with roasted plums! I’ve had a break from the pastry course because of C’s birthday, but got back to it today with this absolute TREAT. The set cream is light and offsets the tangy fruit and gingery base really well. More please!
🍄 mushroom tart 🍄
I used the puffthebakery #puffschool recipe for pate sable and made it savoury and it was the shortest, crumbliest pastry that melted in the mouth 🤤 mushrooms were stir fried with garlic and left… https://t.co/0c5dDSybLf
PUFF PASTRY!! My first creation is a galette des rois, filled with brown butter frangipane. It was a labour of love alright, but totally worth it for these beautiful flakes. To be eaten with a dollop of creme fraiche. #PUFFschool
Brown butter and Summerhill honey madeleines #puffschool
This little thing is a @CorleggyCheese goats cheese gougere. Part of week 1 vol 2 of #puffschool I’ve eaten 5 already 😳
