4 boneless, skinless chicken breasts
2 roasted red peppers, sliced
2 cups fresh spinach
1 cup shredded mozzarella cheese

Directions:

16 large shrimp or jumbo shrimp, peeled and deveined, tails left on
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika
For the crab stuffing
8 oz lump crab meat, picked over for shells
1/2 cup breadcrumbs
1/4 cup mayonnaise
1 large egg
2 tbsp cream cheese, softened
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1 tsp Old Bay seasoning
1 clove garlic, minced
2 tbsp celery, very finely diced
2 tbsp green onion or parsley, finely chopped
1 tbsp lemon juice
2 tbsp grated Parmesan cheese optional
For topping
2 tbsp melted butter
1 tbsp parsley, chopped
Lemon wedges, for serving
Instructions
1. Prepare the shrimp
Preheat your oven to 400°F.
Butter or lightly grease a baking dish.
Slice each shrimp along the back a little deeper than the deveining cut so you can butterfly them open. Be careful not to cut all the way through.
In a bowl, toss the shrimp with olive oil, salt, pepper, and paprika.
2. Make the crab stuffing
In a medium bowl, combine:
lump crab meat
breadcrumbs
mayonnaise
egg
cream cheese
Dijon mustard
Worcestershire sauce
Old Bay seasoning
garlic
celery
green onion or parsley
lemon juice
Parmesan, if using
Mix gently until just combined. Try not to break up the crab too much.
If the filling feels too wet, add a little more breadcrumbs. If it feels too dry, add a small spoonful of mayonnaise.
3. Stuff the shrimp
Arrange the butterflied shrimp in the baking dish with the cut side facing up.
Spoon a mound of crab filling onto each shrimp, pressing it gently so it stays in place.
4. Bake
Brush or drizzle the tops with melted butter.
