If loving God means keeping the Mosaic dietary laws, why did the apostles in Acts 15 decide not to require Gentile believers to keep to full Mosaic law?

It’s also about everything else. If you eat pork all day and nothing else, sure, but the same could be said for most things.

Modern refrigeration, cooking techniques, and advancements in food safety and agriculture have largely mitigated these ancient health concerns.

My question is - how is it reconciled with Acts 15, where the apostles decided not to require Gentile believers to keep to full Mosaic Law?
