Quick Homemade Butter Mayo (Immersion Blender – makes about 1 cup)
Ingredients:
- 1 large egg (room temperature)
- 2 teaspoons fresh lemon juice
- 2 teaspoons Dijon mustard (or prepared mustard)
- ¼ teaspoon salt (or to taste; use ½ tsp if butter is unsalted)
- 1 cup (2 sticks) butter, melted and cooled slightly to warm (not hot)
Directions:
1. Place the egg, lemon juice, mustard, and salt in a tall narrow jar or container that just fits your immersion blender head.
2. Insert the immersion blender to the bottom and blend for a few seconds until combined.
3. With the blender running, slowly pour in the melted butter. Move the blender up and down gently as it thickens into creamy mayo (about 30-60 seconds total).
4. Taste and adjust salt or lemon if needed.
Store in a glass jar in the refrigerator for up to 1 week.

The tomatoes allegedly are "inauthentic, and indeed illegal in Italy."
ICento was ejected from the Italian Consortium that approves San Marzano tomatoes in 2011.
The Consortium "is the only entity which can certify and approve San Marzano tomatoes."
Following an Italian police raid of Cento's operations in 2010, a manager was convicted of criminal fraud for selling counterfeit tomatoes.
Yet Cento continues to give the "false impression that [its product] contains Consortium certified San Marzano tomatoes."

Polysorbate 80 is an emulsifier. Pharmaceutical companies use it as a drug delivery vehicle specifically because it permeates the BBB. Researchers at Tianjin Medical University published a study in Brain, Behavior, and Immunity (2024) showing dietary polysorbate 80 disrupted the blood-brain barrier in mice, accelerated cognitive decline, and triggered neuroinflammation. The mechanism: P80 altered gut bacteria, which changed bile acid metabolism, which sent deoxycholic acid into brain tissue, which activated immune cells that damaged neural architecture.

A recent study has revealed a hidden health risk lurking in millions of kitchens worldwide: even a single scratch on a Teflon-coated nonstick pan can release thousands of plastic particles and millions of microplastics during normal cooking.
Using advanced imaging techniques, researchers in Australia discovered that a minor scratch on the pan’s surface can shed up to 9,000 microplastic particles per use. When the nonstick coating is more significantly damaged or broken, that number can skyrocket to over 2 million particles.
These particles often contain PFAS — the so-called “forever chemicals” — which are highly resistant to heat and degradation. Once ingested, they are extremely difficult for the body to eliminate. PFAS have been linked to serious health concerns, including certain cancers, infertility, hormone disruption, and developmental issues in children. Alarmingly, these chemicals have already been found in the bloodstream of 99% of Americans.
With limited federal regulation on PFAS in consumer products, experts recommend switching to safer alternatives such as stainless steel or well-seasoned cast iron cookware, which do not release toxic particles when heated.
