America is eating the most expensive beef in its history off the smallest herd in seventy years, and the men who breed it are disappearing faster than the cattle.

- Cattle herd, 1 January 2026: 86.2 million head.
- Smallest since: 1951.
- Cattle operations, last census: 732,123.
- Down on five years earlier: 17 per cent.
- Ranches lost since 1997: more than 450,000.
- Retail beef, June 2024 to May 2026: up 27 per cent.
- Live cattle, same window: up 37 per cent.
- Imported beef volume since 2021: up 86 per cent.
- Beef prices since 2021: up 56 per cent.
- Farms and ranches running under a 10 per cent operating margin in 2024: 71 per cent.

Sit with the last four lines. Import volume has nearly doubled in five years and the price went up anyway, because the shortage is not on the boat. It is in the pasture, and every shortage answered with another container makes the next one worse, because no rancher rebuilds a herd for a market Washington keeps flooding.

Herd rebuilding takes years. A heifer kept back today is beef in 2029. Which means the decisions that fix this, or finish it, are being made right now, at kitchen tables, by families deciding whether the boy comes home.

450,000 ranches went while everybody argued about the price of ground beef.

You can import beef. Nobody has yet worked out how to import a rancher.

Buy the animal from the man who raised it, while there is still a man who raised it.
