Sun-Dried Tomato, Spinach, and Ricotta Grilled Cheese
Serves: 2 sandwiches • Prep: 10 minutes • Cook: 10 minutes • Total: ~20 minutes
Ingredients
For the filling
1 tbsp olive oil
2 cups baby spinach
1 small garlic clove, minced
1/3 cup ricotta
1/2 cup shredded mozzarella or 4 slices fresh mozzarella
1/4 cup grated Parmesan
1/3 cup sun-dried tomatoes, sliced
1/4 tsp dried oregano
Pinch red pepper flakes
Salt and black pepper, to taste
For the sandwiches
4 slices thick sourdough or rustic bread
2 tbsp butter, softened
or mayo for spreading on the outside
Instructions
1. Cook the spinach
Heat olive oil in a skillet over medium heat.
Add garlic and cook for 20 seconds.
Add spinach and cook 1–2 minutes, just until wilted.
Season lightly with salt and pepper, then remove from heat.
2. Mix the cheese layer
In a small bowl, stir together ricotta, Parmesan, oregano, a pinch of black pepper, and red pepper flakes.
3. Build the sandwiches
Spread butter on one side of each bread slice.
On the unbuttered side, spread the ricotta mixture.
Add mozzarella, wilted spinach, and sun-dried tomatoes.
Close with the second bread slice, buttered side facing out.
4. Grill
Heat a skillet or griddle over medium-low heat.
Cook the sandwiches for 3–4 minutes per side, pressing gently, until the bread is deep golden and crisp and the cheese is melted.
Lower the heat if the bread browns too fast before the center melts.
5. Serve
Let rest 1 minute, then slice and serve hot.
Tips
Medium-low heat gives you a crisp crust and fully melted center.
Pat the sun-dried tomatoes dry if they’re very oily.
A mix of ricotta + mozzarella gives both creaminess and that melty cheese pull.
Add a little feta or goat cheese if you want a tangier Mediterranean flavor.

@EvanDrellich Would it be more profitable for non-stars if the league implemented a cap and floor? If so, what percentage of the league - as “non-stars” - would benefit from this arrangement?
