Here is a concept I coined: Reverse Learning.
It helped me get into Microsoft, it helped me get my thesis award, and it helped people I'm coaching to get their dream job.
The idea is simple.
Instead of starting from the basic AI algorithms and going to what is used today, reverse the path, start from the techniques used today in the industry, and go back to the basics.
If you are trying to switch your career to AI, this is the best way to learn.
Think about this, what do companies want?
They want you to contribute to their team from minute one.
With tabular data, it is not useful for a company if you know linear regression, but don´t know gradient boosting.
With text, it is not useful for a company if you know TFIDF, but don't know Transformers.
With images, it is not useful for a company if you know SIFT descriptors, but don´t know ConvNets.

@miguelgfierro Completely agree. I'd add that it's very important, when doing so, to keep a well done big picture in mind so you know where are you moving and you dont get lost. Our first step is always the big picture "poster".
