LONG RANT WARNING: I’ve had kosha mangsho, paturi & daab chingri across Kolkata & they’re uniformly disappointing. Take the paturi here - all clumped up, the daab with thick coconut milk where the delicate flavour of the daab is totally lost, the “kosha” is simply a thickened up jhol & not a kosha at all. It seems Bengali food is moving away from the delicate & heavily restrained use of spices & light gravies - to ham handed, over spiced, heavy gravies

Take the absolute barometers - mangsher jhol should be a thin light gravy. Chitol macher Muitha should be light as air and swollen to 4-5 times its original size, daab Chingri should just be mustard oil, green chilli, prawns, ginger, ground up daab and nothing else.

The loss of technique is even across india, with not attempt to preserve - since food is seen as entertainment and not culture. What’s criminal is the substitution of ingredients to compensate for the loss of technique. A daab chingri was a test dish - very exacting because depending on how sweet or bland the daab was the flavours needed to be balanced. Today the daab is merely for show - the cooking is done in the pan with coconut milk, and it’s placed into the daab for pure show and nothing else.

Even with moghlai techniques like kosha - the process isn’t followed - fry the meat at least 3 times - deglazing with hot water every time to create a luscious even caramelisation of the meat. Then repeat the process with the masala - intense concentrated flavour. All gone. If it ain’t rich black- it ain’t kosha.

I understand modern bengali is easy …. But preserving food isn’t about ease - it’s about honesty. Ballygunge 6, Koshe Kosha, Bhojohori Manna, Kewpie have all gone down this disastrous route. On the other hand the original chap in Golbari - seeks to have forgotten the technique himself, started substituting & the quality of his mutton has become crap.

It’s one thing doing it at home, for speed and convenience- but you go to a restaurant because you’re paying for them to NOT TAKE SHORCUTS. But when restaurants start doing this, it’s the end of civilisation.

Let me explain how this system works when someone dies:

1. The first is when you fill out Form 7 on your end and submit it to the local election commission office along with a physical copy of the death certificate of your deceased family member.
