I ran out of available disk space through this non-experiment.
Takeaway - yes, this cheap ass mac mini from 2018 with no GPU but upgraded to 32GB RAM can do some decent work. Its just slow ~1min/image. Seems like a good fit for a batch job without having to shell out for tokens

Just finished migrating my site over to 11ty from wordpress - how refreshing. This cuts my hosting down from $320/yr (come on, thats too high) to a couple of cents a month, hosted on Cloudfront + S3.
Although it does make me miss the WP admin panel sometimes.
