@katherinespiers The eggs could be what gives it the height described in the recipe, or the crumb structure. I’ve learned to bake egg and dairy free over the last two years, and adapting is a risk. I have better results just choosing something developed without eggs that has a similar flavor.

@katherinespiers I would look for a different recipe that is specifically egg free. This recipe calls for 5 eggs, and changing it to applesauce or aquafaba is risky because neither have fat or significant protein. Just Egg will be gross.
