I would say you're over-exaggerating a bit on what the models will look like.

The GTA VI models will not look like the GTA V models.

What they did in RDR2 is raise the in-game baseline so the switch is less obvious than Lamar's two heights and two face rigs in GTA V. They won't completely cook the characters outside of cinematic scenes. All they did to GTA V when it got put onto the PS5 was enhance it a bit. It's not as crazy as a jump as it was going from 360/PS3 to PS4.

GTA VI now will take into consideration the true hardware of a PS5, and actually push a next-gen title.
