This book is essential reading and deeply illuminating. Sugar also enabled the mass consumption of caffeinated beverages that had previously been too bitter to drink in large quantities. As a result, sugar helped usher in a “new era of alertness,” fueling the rise of coffeehouses, which in turn nurtured a new medium...the newspaper...and contributed to the intellectual ferment associated with the Enlightenment.
