If you're very concerned about extroardinary wealth leading to concentration of power in government, may I suggest a system of horizontal and vertical checks and balances, restricted to limited and enumerated powers?
That time it's 5:43 in the morning and you open X and see that you, a person who posts maybe once a day and has no followers, has 20 notifications. And while you're waiting for the app to load you wrack your brain as to why you have 20 notifications and then you realize, "Ohh, it's the Mormon post."
And before X loads you can picture the comments in your mind's eye, every brittle insistance that Mormons are Christians and that Christians simply don't understand that Mormonism's hugely divergent doctrinal beliefs are all (a) misunderstood and (b) don't even exist, and beyond that they're the real Christians if it comes down to it.
...And then X loads and it is indeed "The Mormon Post" and the comments are pretty much what you pictured.
The fact that Mormons are even bothering to respond to a post by an irrelevent nobody on X who has fewer than 200 followers (60% of which are bots) only bolsters my belief that Mormons are oddly fixated on being viewed as Christians instead of being content being viewed as Mormons.
Also, keep in mind, I'm a member of the Orthodox Presbyterian Church. One of its founders, J. Gresham Machen wrote a book called "Christianity and Liberalism" that argued liberal Christianity was a separate, non-Christian religion. If I have the perspective that some churches who once legitimately bore the name of Christian have drifted so far astray in their doctrine that they are no longer Christian then I'm obviously not going to believe the claimed Christian legitimacy of a religion founded by a sex pest conman who practiced folk magic, rejected existing Christianity, and wrote his own scriptures.
Why are Mormons so fixated on being viewed as Christians? Why not just be content with being viewed as Mormons instead of getting all prickly when people point out Mormonism is not Christian?
Hopefully this results in stores stocking fewer big sizes and more regular sizes. I hate seeing something nice then finding that all the regular sizes are gone and only the giant sizes are left.

Keep in mind, there's a reasonable chance that the guys you're watching on YouTube are not actually doing the things they talk about. It's very easy to say things; it's very different to actually do those things.
I think your husband is wise to not want you to fast except when required. Suffering does not inherently equate to moral/spiritual improvement--particularly not self-induced suffering.
Instead of focusing on whether or not you are or should be suffering, maybe try to focus on your responsibilities which on a basic level are (1) to care for your husband and maintain your home, (2) when you have children to care for your children, (3) to care for your parents and in-laws, (4) to care for your friends and physical community. I think you will find there's more than enough service and hardship to be found in merely doing those things before you ever get to doing intense fasts and keeping up with prayer intentions on the internet.
Finally, do not discount or reject the truth that God is going to make your spirit what He wants it to be--and that this will come about through His actions in His time. Your salvation was reliant on Him; your justification and glorification are also reliant on Him. He is and will continue to work in you and through you even if it looks different from what you imagine. As Paul writes in Roman's 8:
"For those whom He foreknew, He also predestined to become conformed to the image of His Son, so that He would be the firstborn among many brothers and sisters; and these whom He predestined, He also called; and these whom He called, He also justified; and these whom He justified, He also glorified. What then shall we say to these things? If God is for us, who is against us? He who did not spare His own Son, but delivered Him over for us all, how will He not also with Him freely give us all things? Who will bring charges against God’s elect? God is the one who justifies; who is the one who condemns? Christ Jesus is He who died, but rather, was raised, who is at the right hand of God, who also intercedes for us.”
