It's not that I cannot handle the responsibility, I've been on similar scenario abroad with a 10-month delay of the actual promotion and pay. I can definitely do it but with the right price of course.
Some family-owned and local restaurants in Baguio hire you as a Sous Chef, Assistant Head Chef, or Chef de Partie, but expect you to perform as the Head Chef. There's no one above you, full leadership of the kitchen brigade, but are NOT paid as one.
Wise but stingy if you ask me.
