La saucisse de Morteau. Celle qu’on reconnaît tout de suite à sa cheville de bois.

Elle naît au XVIe siècle dans les fermes à tuyé du Haut-Doubs. Ces immenses cheminées pyramidales de 12 à 15 mètres, construites avec des centaines de sapins, où les montagnons fumaient leurs salaisons pour passer l’hiver.

Viande de porc hachée grossièrement, embossée dans un boyau naturel, fermée d’un côté par une petite cheville de bois, de l’autre par une ficelle. Puis fumée lentement à la sciure de résineux (sapin, épicéa, genévrier) pendant au moins 24 heures dans le tuyé, parfois plusieurs jours.

Le goût est net : fumée profonde, viande juteuse, texture ferme et moelleuse à la fois. Rien d’autre que du porc, du sel, du poivre. Les porcs sont nourris au petit-lait des fromageries comtoises. Le cycle reste fermé.

Sa réputation sort de la région au XVIIIe siècle, portée par les voyageurs et les marchands. En 2010, elle obtient l’IGP. Aujourd’hui, elle se produit encore dans les quatre départements de Franche-Comté. Des millions de saucisses chaque année, toujours avec la même cheville.

On la cuit à l’eau frémissante, sans la piquer. Elle accompagne lentilles, pommes de terre, cancoillotte.

Why isn’t the pressure on Putin to stop attacking Ukraine?

I don’t think @ZelenskyyUa is being unreasonable.

I fully support President Trump and I empathize with Amercians paying more for diesel, but you have to admit, Putin refusing to come to the table to sign a deal and his refusal to stop targeting civilians with ballistic missiles is abhorrent. Zelenskyy is trying to save his people from being slaughtered by a madman. Putin has been refusing to end this war that President Trump wants to end. Zelenskyy said he would stop bombing Russia but Putin won’t agree to stop bombing Ukraine.

How does that work?

At the end of the day, Vladimir Putin has killed more white, Christian European men and women than Al Baghdadi ever did.

That’s a fact. Putin is actually worse than ISIS.
