Calibration issue. Like pressing on an old joystick while plugging it in, and now it’s stuck moving that direction. You have to calibrate back to center, but when the color is gone, now you’re overcompensating. At least that’s how I explain it to myself without really knowing.

Also, I hate it when videos say “don’t exist” like this because it makes me think I’ll see colors I’ve never seen before, not simply colors that aren’t there.
