Made an awesome Rigatoni Carbonara for dinner tonight. Guanciale (or pancetta) if you can’t find, toasted black pepper, egg yolk, lots of Pecorino Romano and Parmigiano Reggiano, little salt, pasta water and guanciale oil. That’s IT!! It’s all in the process.
