Neither rajma nor soya chunks belong to the grammar of Bengali food culture. This is the steady flattening of regional foodways into a single, sanitised, upper-caste North Indian idea of what counts as “pure”, “quality”, “nutritious” food.

This is what cultural erasure tastes like.

Every nutritionist and every think-tank report tells you to eat local, seasonal, and how your grandparents ate.

But it seems that wisdom is only for the rich.

Poor kids, meanwhile, will eat sub-standard rajma trucked in from Gujarat, while Himalayan rajma crops have been failing for the last 3 years under climate collapse. (I know this because I live in a village in Uttarakhand and work with farmers.)

People in mountain villages can’t afford their own rajma anymore, but policymakers want it on school menus in Bengal.
