Build your classroom community with food. Today is National Empanada Day. Empanadas are handheld pies or turnovers, where a filling is enclosed in a pastry dough and then baked or fried. You can make your empanadas with meat, cheese, vegetables or fruit fillings. The name empanada comes from the Galician, Portuguese and Spanish verb empandar, meaning to wrap or coat in bread.
