A Negroni seems simple on paper: spirit, bitter, and sweet. But real balance takes intention. At Izakaya Juraku in NYC, we wanted to create a version that feels both bold and delicate.
Scarlet Bitter Liqueur, made by Iseya Distillery in Kanagawa, Japan, is a small-batch amaro crafted with over 25 botanicals including blood orange peel, sage, licorice, and cinnamon. Its deep red hue and layered herbal notes give the drink its name and character.
We pair it with Malasanta Ensamble Mezcal, which adds smoke and mineral depth, and Umeshu, a Japanese plum liqueur that softens the edges with fruit and umami.
The result is something entirely its own β a Japanese-style Negroni that bridges continents and philosophies. Balanced like matcha, structured like a haiku, and alive with the energy of New York.
