I was able to order the same model you tested (i9 12900k, 64gb, Rex a2000) for $1400. But after seeing your video, I am worried about fan noise.

Should I swap down to the i7 12700k?

I see the giga 6 has two hoppers (which can be controlled individually?) but it is $6000!

But big money can definitely enable *parts* of solutions (scale, speed, etc) that (less) money would bottleneck?

I don’t have a solution, obv. But a creaky janky system can’t last forever……
