I went through something similar. The heavy mental fog specifically. I couldn’t do simple tasks etc. Found out I wasn’t breathing correctly (from an old knee injury, it offset my walking gait and guarded my pelvic floor from releasing when breathing). Discovered pelvic breathing and did all the exercises and then about 4 weeks after symptoms lifted. My Body couldn’t get into parasympathetic state because my breathing was backwards all day and night, so every breath caused me anxiety, leading to extreme mental fog, then anxiety about the mental fog. Your symptoms sound similar, body can’t get into parasympathetic state for some reason. An easy way is to force deep pelvic breathing first thing in morning, check up any CPPS exercises, they force proper deep breathing to get you into a recovery state. That will clear the mental fog, then can retrain breathing pattern to always stay in recovery state long enough until symptoms lift. After about 4 weeks (if you have a day off do the breathing like 6 hours worth) these lower level mental issues will lift, and your normal day to day problems will be back to normal.
